Crepes With Apple Compote

Crepes with apple compote make for a delightful and versatile dish! Crepes are a thin and delicate pancake of French origin. When a crepe is paired with apple compote, the combination is truly irresistible.

Recipe:

Crepe

1 1/2 cups of milk

2 eggs

1 cup of flour

Add all the ingredients in a blender and blend until smooth. Butter a cast iron, stainless steel, or nonstick pan and pour on 1/4 cup of the batter. Swirl the batter around until its at the edges of the pan. Let it cook until the top is mostly cooked and firm. Then flip to the other side and cook for another 30 - 60 seconds.

Compote

1/3 cup of sugar

3 tbsp of butter

1/2 tsp of cinnamon

2 diced apples

Melt the butter, sugar, and cinnamon in a pan and add the apples and stir. Cover with a lid and let them cook until they are soft, about 3-4 minutes.

Scoop the apples onto the crepe, fold it up and top with powdered sugar or whipped cream.
