Preparation:

Thoroughly wash, cut, and blanch the fruits and vegetables.

Pre-freeze:

Spread the prepared pieces in a single layer on a baking sheet. Place the sheets in the freezer and pre-freeze the fruits and vegetables until they are solid. This helps speed up the freeze drying process.

Freeze Drying:

Load the pre-frozen fruits and vegetables into the freeze-dryer. Follow the manufacturers instruction for setting the drying cycle. The machine will create a vacuum and gradually warm the food to remove moisture while keeping it frozen.

Storage:

Store the freeze-dried fruits and vegetables in airtight containers or vacuum-sealed bags to keep them crip and prevent moisture from getting in. Keep the containers in a cook, dark place to maximize shelf life.
